As a *workaround*, you should be able to give it the full list:
./configure
--with-error-checking=noextents,notypes,notext,nogc,nomalloc,nobyte_code,noglyphs,nodisplay,nostructures

Do you have the current beta (21.5.24)? It has a last minute fix to a
bug which affected only this flag.
Yes, this is with the current beta. I updated my sources again this morning
just to make sure. All of --without-error-checking, --disable-error-checking
and --with-error-checking=none, fail with the same error.
I haven't tried to replicate yet (sorry), and I'm not going
to be free
to investigate carefully for a couple days, but I did want to
explain the potential workaround.
