MULE bug/feature when redefining face to a non-iso-8859 font

I have been struggling a long time with a face-font problem in XEmacs/MULE. As long as the font is in the "iso8859-*" encoding family, no problem. But I could not redfine the 'default face to the "adobe-symbol" font (whose encoding is "adobe-fontspecific") It seems related to the fallback principle, and I played with specifier functions to try to circumvent the default behavior, but it didn't work. Here is an example file with many attempts at font selection: every `set-face-property' fails at changing the font.
