disabling toolbar on initial X11 window?

Currently you probably can't, because the first frame is initialized
before the init file is run (and that includes the site-start and
default.el initializations).
What you are supposed to be able to do is use the -unmapped flag to
suppress display of the first frame, then use either gnuclient or the
init file to bring up a frame.
