It's a "fug", or maybe a "beature".
The function bound to that menu item is doing what it is documented to
do, which is installing the definition into the existing global
keymap. At that point it becomes anonymous, and the only way to save
your new binding is to save the whole map, which you don't want to do
(you'll essentially freeze your keymap in place, and miss any future
improvements, and possibly overwrite bindings from new packages etc).
I think that anything that is invoked from that menu _should_ be
savable, so I'll put the issue in the queue as a feature request. But
it will (AFAIK right now) require new code, not just fixing the old
function, so who knows when it will get to the front of the line. :-/
