Try using the resources *menubar*FontSet: -*-*-*-*-*-*-*-120-*-*-*-*-iso8859-* *popup*FontSet: -*-*-*-*-*-*-*-120-*-*-*-*-iso8859-* and work forward from there to a menubar/popup font you can stand. If you still crash, the server is pretty well terminally broken; you'll have to find out what it wants and stick it in there by hand. Please let us know what font you do have.
