Actually, it's
(face-font-name 'default)
"Monospace-12"
which isn't even one of the fonts listed in the options menu!
Nope. It's a standard generic family alias (the other main ones are
Serif and "Sans serif") from /etc/fonts.conf (or wherever your distro
puts it). Fontconfig automatically resolves it to the first of a
rather long list of monospace fonts that it finds.
