No. Just ditch is from the options menu altogether but keep the M-x
edit-faces command somewhere.

I still am not sure this is a good thing to do. The trouble is that a
lot of other stuff tests these variables and probaly don't like it that they
suddenlky have a default value. Can you not use
lazy-shot-auto-enable or some other variable that is not used
internally in lazy-shot.

I will. However, it sounds more like a kludge. What is it compared to
font-lock-auto-fontify ?
It allows a way to turn lazy-lock and font-lock on and off based on major
mode (i.e. combining font-lock-auto-fontify and the
font-lock-mode-enable-list font-lock-mode-disable-list variables).
This makes it easier to Customize probably.
Or even switch to the "f-l-support-modes" stuff.

P.S. I still think it would be nicer if one could just customize the
approprate mode specific hook.
