Have you seen Aquamacs (
http://sourceforge.net/projects/aquamacs)? I
believe it presents a much more Mac-like interface than do either
X11-GNU-Emacs or Carbon Emacs. Its code is GPLed. It is supposed to
have more complete support for unicode than do the other versions.
As I understand it, this is based on Andrew Choi’s GNU Emacs work, but with
various things included and turned on by default (like cua-mode, or whatever
that’s called on OS X) to make it friendlier to the OS X user.
I don't suppose anyone is working on creating a CoCoa-based
version.
