OK, there's something missing in the configuration, I'm not sure what. The specifier tag 'mule-fonts is not getting defined, but as far as I can tell it isn't supposed to get defined in XEmacs 21.5 or 21.4; why x-symbol uses that, I don't know. Try putting (define-specifier-tag 'mule-fonts) in init.el near the top. This should allow x-symbol to initialize properly, although I still doubt you'll get useful output.
