The Emacs manual has the best description and it's merely "fontname [properties] [size]" with a list of valid weight and slant properties. I know that font names can have spaces in them. I've never seen one with a dash, but don't know if they're legal. I've been using the dash to differentiate fontconfig from Gtk.
