Somewhere in the documentation for that variable it tells you it gets
the expansions for those strings from `TeX-expand-list', but the
expansion of "%V" turns out to be an anonymous function (don't you
just love indirection?) Checking the various identifiers in that
function, I found one that actually refers to the names and options of
system viewer commands.
My first guess is to replace "%V" with "open %d". However, that may
not always do the right thing. If it gets annoying, you may want to
customize the variable `TeX-output-view-style', I guess.
