the copy icon was not greyed out for me once I did a left mouse hold down 
and dragged my mouse over the part of the text to be copied.

When there is no text to be copied (that is no hilighted text) then the 
copy icon is greyed out. Once you left mouse button down drag mouse over 
text - then the copy icon becomes useable.

However the sequence of left mouse drag and highlight, then right mouse 
click and choose copy from bottom of menu, then move mouse to other 
document and place at the point of insertion and then right mouse click 
choose paste from bottom of menu - this will let you do it all with the 
mouse.

To do it all from the keyboard you use the arrow keys to get to one or the 
other end of the part you want to copy, hold down shift while you use the 
arrow keys to highlight the part to be copied, then do Ctrl c to make the 
copy.

Then go to the other document and click on itd - use arrow keys to place 
the pointer at the insert point, then Ctrl v will paste the copied text.


The drop down menus at the top of the window can also be used - and 
each action has the Ctrl character sequence for that action 
displayed to the right of the action - so you can learn them.

Generally in most applications Ctrl c and Ctrl v work respectively to 
copy and paste. Not just in OO Writer.
