For production virtualization, I'm a big proponent of
libvirt.  It's a snap to set up.  You mentioned Ubuntu, which packages
libvirt.  This would allow you to use good virtualization technology and
run as many unmodified distros/operating systems as you'd like.

libvirt is free/open source software, and happens to be free of charge.
